The Wagyu Window Char Siu Wagyu Tri-Tip (Chinese BBQ Wagyu Tri-Tip)

We like to say that our Australian Purebred line is what inspired The Wagyu Window. Char siu (叉烧) is a type of Cantonese roast meat. Char siu has a depth of flavors, both sweet and salty. Simple white rice and steamed vegetables compliments the meat very well. (Our favorite rice is Botan Calrose!)

Marinade:

(For ~ 3lb Tri Tip) 

Combine all ingredients in a large bowl & mix. Separate 1/4 cup of this mixture into a separate container. Set aside. 

  • 1/4 cup honey
  • 1/4 cup shaoxing wine (can be replaced with a dry sherry or mirin)
  • 1/4 cup light soy sauce
  • 2 tablespoons dark soy sauce
  • 1/2 teaspoon Chinese 5-spice powder
  • 2 tablespoons oyster sauce
  • 3 tablespoons raw brown sugar
  • 3-5 crushed garlic cloves
  • 1 tablespoon beetroot powder (can be found at Whole Foods)

Cut The Wagyu Window Tri-Tip into 2 inch thick pieces and place into a large sous vide bag, add the marinade and massage the marinade into the Tri-Tip. Refrigerate & marinate overnight. Refrigerate the remaining 1/4 cup of marinade in a separate container.

Method:

Sous Vide the marinated Tri-Tip in an airtight sous vide bag for a minimum of 6 hours at 135F. After a minimum of 6 hours, remove the Tri-Tip pieces from the sous vide bag, then pat it dry with a paper towel. Place the Tri-Tip pieces on top of a baking pan and cooling rack. 

Pre heat your oven broiler on HI.

Using the remaining marinade that you've set aside, add 2 tablespoons of honey and mix. Brush the mixture onto the Tri-Tip pieces and broil on HI. Repeat the brushing every 2-3 minutes and flip the Tri-Tip. Repeat this a few times. Slice, serve & ENJOY!
