Japanese A5 Hokkaido Ribeye - from Hokkaido Prefecture, Japan’s Northernmost main island. Renowned for it’s cold weather climate. The farmers of Hokkaido are famous for raising their cattle in cold weather & swear by the effect of it on Wagyu beef.
In order to be rated A5, the marbling must score must be between 8-12 on the BMS scale.
-9 BMS delivers a steak with richness that is not overwhelming and has more meat to fat ratio for a more "steak" like experience.
-10 BMS is a sweet spot for Japanese A5. Being right in the middle of the scale. 8 being the lowest & 12 being the highest. Offering stunning marbling but still a nice meatiness to it.
-11 BMS is the upper tier of Japanese A5. This steak will have unreal marbling and tenderness.
-12 BMS is the highest grade A5 there is. This steak will be a true delicacy. For most this will be something you'd only have for a few bites.
